Food Friday: Tomato Cottage Cheese Salad

Food can bring up memories and I don't know about you but certain foods have good or bad memories for me. Tomatoes and cottage cheese are a good memory.

About 15 years ago I worked at a non-profit and one of our supporters/volunteers was a wonderful woman who lived in a nearby retirement community. She had lived an interesting life that included living in China and traveling the world educating children. She married while in her late 60s or early 70s to a man who had once worked with Caesar Chavez.

She invited a few of us staff to her home and made dinner. I cannot tell you what we had except for the salad/appetizer. Using freshly picked tomatoes straight from their garden she placed a lettuce leaf on a plate, cottage cheese , a tomato slice and black pepper. Now I know this sounds incredibly simple but it was so simple it was divine.

Today's Food Friday is a take on that salad but this recipe involves a few more ingredients. Today's recipe comes from the Evansville's Favorite Records. Compiled by the Ladies Aid of the Presbyterian Church. Evansville, Minnesota. No date is found on the cookbook but my guess is circa 1940-1950s.

A cool salad sounds great especially with the heat and winds we've had lately. A home-grown tomato would make this so much better.
