Not sure what to do with that bumper crop of tomatoes? This recipe from the centennial cookbook titled,
Incredible Edibles from Sacred Heart Parish (Redlands, California. 1994) provides a rather interesting tomato recipe. The name says it all and there's no doubt in my mind that the idea behind it came from substituting foods in times of a recession or food rationing.
